Stone sharpening is the best way to sharpen any knives, not just Global knives. In between stone sharpenings, you can use Global’s 25cm ceramic sharpening rod. These sharpeners are used in the same way that traditional steels are used to sharpen other knives and, as they are made from one of the hardest materials known to man, are suitable for sharpening all good quality knives. A diamond rod will not break if it is hit or dropped, like the ceramic rod; however, the ceramic rod will give a finer edge if used regularly, and replacements may be purchased if you break your ceramic rod. Hold the ceramic rod vertically, with the tip resting on a towel or on another non-slip surface. Place the heel of the knife blade against the rod, at the same angle you used when sharpening the knife. If you are unsure of the angle, somewhere around 20 degrees is probably ok. The most important thing is to maintain the same angle throughout the honing process. 2. Stroke the knife slowly down the rod, starting at the heel of the blade and finishing at the tip. Keep your wrist still while moving your elbow back, apply just slight pressure to the rob.
