Hand-picked in two parcels – Part one gently stomped and left on skins, part two picked later and whole bunch pressed. Fermented using vineyard derived yeasts, and aged in neutral oak for 9 months. No additions except sulphur, minimal filtration. Lemon rind, white florals, river rocks, texture.
