Karamo Village in Ethiopia’s Sidamo region, renowned for award-winning coffees, is situated in Bula Woreda at high altitude, benefiting from a unique microclimate. The elevation extends the harvest season, allowing cherries to ripen slowly and develop complex flavours. About 350 smallholder farmers, each managing roughly 2.5 hectares, deliver cherries to a local station, choosing the nearest collection point for direct sale. Cherries are sorted, with quantities recorded for fair payment, then transported to raised drying beds. Only ripe cherries are spread out, manually turned regularly to prevent spoilage and over-fermentation. During peak harvest, cherries arrive daily and are moved between beds to dry.
