Cooking Control

- Traditional Smoke Mode: Place the main body and lid on the base pan. Put the water pan on the lower brackets and the food on the cooking grate above.
- Charcoal Grill Mode: Remove the charcoal pan and place it on the upper supports. Cover with the lid for direct grilling.
- Using Smoking Wood Chips: Use hardwood (apple, cherry, walnut, hickory), 7.6–10 cm long, 2.5–5 cm thick. Soak in water for 30 min or wrap in foil with holes to prevent quick burning.
- Long Smoke Sessions: For smokes over 2–3 hours, check water pan and refill as needed to maintain moisture and smoke quality.
