Soft Roti Wraps

 

Roti are tender, versatile and very cheap to make. Use as a wrap, a tortilla, a snack or to mop up gravy. Recipe makes 8 but can easily be doubled. These roti are quite easy to roll so the kids can get involved and have a go.
Ingredients


- 1β…“ cups plain flour
- 1 tbsp oil
- 1 tbsp melted butter or use 1 tbsp oil
- 1 cup boiling water

Method

Put the flour into a large bowl. Combine the oil and boiling water and mix into the flour to form a soft dough, add more water if you need to.

Mix until the dough sticks together then put on a floured bench and knead, adding more flour as required to prevent it sticking to your hands or the bench. Knead until smooth – around 1-2 minutes then pop it back in the bowl and cover with a cloth while you melt the butter.

Roll the dough into a large circle, brush the circle with melted butter or oil and roll up like a Swiss roll. Slice the roll into 8 pieces and flatten each piece with your hand before rolling out into a circle approximately 15 cm in diameter.

To cook the Roti heat a large frying pan until sizzling hot – splash some water on to see if it’s hot enough. Place a roti in the pan and cook for 30 seconds then flip over and cook for 1 minute then flip again and cook until it has browned and bubbled all over. Continue cooking the remaining roti, if you have two pans you can cook them two at a time.
