No8 Distillery French Absinthe is a powerful, authentically styled absinthe from Dunedin’s award-winning No8 Distillery, built around a family recipe passed down through master distiller Julien Delavoie’s family for three generations. His French heritage sits at the heart of this release, combining traditional technique with No8’s small batch New Zealand craftsmanship. Bottled at a formidable 72%, it is intensely aromatic and full flavoured, but sufficiently polished to be enjoyed in the traditional style with chilled water.

This exceptional French style absinthe leads with strong liquorice and star anise, followed by fennel, caraway, and a creamy herbal richness that softens its considerable strength. Adding cold water opens the botanicals, lowers the drinking strength, and creates the cloudy transformation known as the louche. It can also be enjoyed through the traditional absinthe ritual with chilled water poured slowly over a sugar cube, or used sparingly to bring aromatic depth to classic cocktails.

Powerful and intensely aromatic with creamy liquorice, star anise, fennel, and caraway, followed by deep herbal complexity and a long, warming finish.
