BaBin Spice Rum 700ml

BaBin Spice Rum is part of the first commercial release from BaBin Rum Reserve, the premium dark-spirit collection created by No8 Distillery in Dunedin. Six years in the making, it brings together French distilling heritage, thoughtful cask selection, and a carefully managed solera ageing programme to create something far more refined than the usual sweet-and-simple spiced rum. Warm, aromatic, and contemporary, it is built for sipping as confidently as it is for premium mixed drinks.

This polished New Zealand spiced rum begins with a three-year-old solera blend matured through selected ex-Chardonnay and ex-Armagnac casks. The Chardonnay oak contributes fruit, roundness, and gentle vanilla, while the Armagnac casks bring deeper dried-fruit, spice, and oak character. Tonka bean, orange, allspice, vanilla, cardamom, and cocoa are then layered through the blend, creating a smooth, warming palate with exotic spice, citrus peel, coffee, cocoa, and softly toasted oak. It is bold enough to stand on its own, but balanced and accessible enough for an elevated Rum and Ginger or a richly spiced Old Fashioned.

Tasting Notes

Warm and aromatic with vanilla, tonka bean, citrus peel, dried fruit, toasted oak, and soft exotic spice, followed by cocoa, coffee, gentle herbs, and a smooth, warming finish.
