Overview: produced by hexane extraction of the buds of Ribes Nigrum. The bush of blackcurrant is grown in France mainly in the Burgundy area. Its fruit, called ‘Noir de Bourgogne’ and ‘Royal de Naples’, is used to produce the liquor of Cassis widely known to be added to white wine to get the Kir. This cocktail was promoted by the Chanoine (canon) Kir in the 50’s. The blackcurrant bud, sweet smelling, finds its use in fine fragrances as well as flavours industries under its absolute form (Pastries, ice-cream, sorbets, syrup, jelly, juices,.)
Production: The bushes are pruned in January. The buds on the branches are removed manually with a special knife. This meticulous operation takes a long time and explains the reason for high prices of buds. These buds are hexane extracted in order to get the concrete.
