Overview: Ginger essential oil or ginger root oil is produced by steam distillation of the dried rhizome. Like its family members turmeric and cardamom, ginger is a widely used spice and a folk medicine. India contributes to almost 44% of world production but mostly consumed for domestic purposes rather than export. Ginger is a key ingredient in Indian cuisine whether it is veg or non-vegetarian. The plant is basically a cultigen and was believed to be produced by Indians and Chinese for over 5,000 years as a tonic root. The ginger is harvested in 8-9 months but it has to grow for more than 9 months for the production of essential oils as the concentration of oil increases when it ages.
