We have true reverence for brewing our Ginger Beer the traditional way; slowly, deliberately, and with the understanding that real flavour can’t be hurried. Hakanoa Ginger Beer is created in that spirit. Every bottle contains the craft of fermentation, the flavour of honest ingredients, and the charm of a recipe rooted in our heritage.

The Craft Behind the Bottle

Our ginger beer begins with our own living “bug" or "plant" which is a wild culture of yeast and lactobacilli we’ve nurtured with our own hands. This culture transforms a handful of simple ingredients into something more nuanced: a ginger beer with natural tang, graceful spice, and a depth that only our slow wild fermentation can reveal.

We brew with unprocessed, uncompromising ingredients:

- Mature Fiji ginger — fresh and dried — for layered warmth and flavour
- Organic fair-trade raw cane sugar
- New Zealand lemon juice for citrus brightness
- Sultanas to anchor the ginger flavours
- Filtered water, and our wild culture.

Over several quiet weeks, this mixture is left to evolve at its own pace. What emerges is a drink with rich ginger flavour, a whisper of fruit, and a beautiful crispness.
