Alpha Amylase is a specialised enzyme designed to improve mashing efficiency when brewing or fermenting with grain. It works by breaking down solid starches into fermentable sugars such as dextrins, maltose, and glucose, helping maximise sugar extraction during the mash process.

Ideal for grain-based washes, Alpha Amylase supports efficient starch liquefaction and is suitable for use in organic production. It is an essential first step when working with raw or unmalted grains prior to fermentation. 50% active ingredient compared to other brands.

Usage
Add directly into your mash with your grains during the mashing stage.

Dosage
One sachet is suitable for use with up to 10kg of grain.

pH Stability
4.0 – 9.0 (optimum 4.0 – 5.0)

Temperature Range
Optimum at 50°C
