~ Chicken and Broccoli Bake (using Chicken Soup + Breading Mix)

Low carb chicken and broccoli bake

Super tasty, can use any vegetables you like and the concept can apply to any other meats, like sausages. pork chops.

Ingredients ( = available here at Keto Store NZ):
The amounts can be varied depending on mouths to feed / desire for leftovers / meal prep
2 chicken breasts chopped
Broccoli florets chopped
Courgette sliced
1 Tablespoon of Creamy Chicken Soup Mix OR Creamy Chicken and Bacon Soup Mix
150ml Boiled Water
150ml Mayonnaise (we recommend the Side Car brand)
1 Tablespoon Curry Powder
1 Cups Keto Breading Mix
50ml Olive Oil or melted butter
Grated cheese with added 1 Tablespoon of Cheese Powder
Equipment:
Chopping board, knife
Pot to boil water
Mug to mix soup

B owl to mix breaded topping
Grater for cheese
Casserole dish, or baking tin
Method:
1 - Chop up two chicken breasts
2 - Chop florets of broccoli and slice courgettes
3 - Boil chicken and broccoli and veggies in a pot with water until just cooked
4 - Preheat your oven to 180C on Bake
5 - In a mug add 1 Tablespoon of Keto Soup Mix to 150ml hot water and stir to combine
6 - Drain the boiled water out of the pot with chicken and broccoli, and add in the prepared soup liquid. Stir in 150ml SideCar Mayonnaise and 1 Tablespoon of Curry Powder and combine
7 - Ladle the mixture into a casserole dish
8 - In a bowl combine 1 Cup of Keto Breading Mix, 50ml Olive Oil or melted butter, Grated cheese and 1 Tablespoon of Cheese Powder to create the topping mixture.
9 - Spread the topping over contents already in the casserole dish.
10 - Bake until golden and bubbling. and tuck in!
