They’ve got a slightly firm bite and a gentle bitterness that softens beautifully when cooked. You’ll often see them sliced or quartered and added to curries, where they soak up rich, spicy sauces, or quickly stir fried so they keep a bit of crunch. They’re also great raw in salads for a fresh snap, or blanched and added to sambals. Tiny but mighty, Thai eggplant brings big flavour to the table.
