SATO Riesling 2021

From the BioGro certified organicÊ'Red Shed' and 'Domaine Road' Vineyards in Bendigo and Cromwell, Central Otago, the hand harvested fruit was destemmed and seperated into two.

55%Êof the fruit was carbonic macerated (as whole fruit) for 8 days, 45% of the fruit was direct-pressed upon receival. Once together, the blended wine was then matured in aged French oak (0% new) and stainless steel tanks for 10 months. The finished wine was bottled unfiltered, unfined (vegan) and with just 25 mg/L sulphites added at bottling. Approx 0.6g/L residual sugar (dry).

Pale lemon in colour, the wine has soft, riper citrus and stonefruit flavours, a broader, lees/carbonic-influenced mouthfeel and a soft, but lingering acidity. The nose has nice wild ferment complexity to it, but it still drinks with purity, finesse and a sense of place.
