Also known as the Deepwater clam, New Zealand's Geo Duck (pronounced 'gooey -duck') is one of the world's most unique seafood delicacies harvested from New Zealand's pristine coastal waters.

Whilst a clam, the flavour profile ranges from that of an oyster to a scallop, and whilst golden on the outside, the flesh is translucent to light cream colour that varies depending on where they are harvested from.
