The best way to have Roast Lamb. Cook in a covered roasting dish with 1 cup stock, Onions, Smashed Garlic and fresh herbs like Rosemary and Thyme. Set your oven to 150 Celsius and let the magic happen over a 4 hour cooking time. Use the pan juices and confit Onions to make a delicious Jus with maybe a splash of red wine, after removing some of the liquid fat.
