This experimental lot from Jairo Arcila pushes the boundaries of modern Colombian processing. The cherries undergo a 72-hour dry anaerobic fermentation with wine yeast and fresh strawberries, creating a juicy, fruit-forward cup layered with ripe strawberry, bright tangerine acidity, and smooth caramel–chocolate sweetness. Clean, expressive, and vibrant.

What makes this coffee truly special is the intentional use of wine yeast and real fruit during fermentation, a technique that enhances flavour development while maintaining clarity in the cup. Combined with the natural sweetness of the honey process and the unique volcanic soils of Quindio, this release is a rare showcase of craftsmanship, innovation, and terroir.
