Estrella de Castilla 100% Acorn Fed Iberian Jamón Leg

 

A carefully selected hind leg from 100% acorn-fed Iberian Pata Negra pigs, raised freely in the dehesa, a traditional Mediterranean pasture of holm oak and cork trees. These pigs feed naturally on acorns and grasses, resulting in exceptional quality and flavour.

The leg is thin, elongated, and rounded, with a glossy, uniform dark-red colour and a delicate layer of fat that ensures juiciness, a powerful aroma, and a sublime taste.

Our most celebrated ham, it received the highest accolade at the Great Taste Awards 2020, cementing its status as a true gastronomic treasure.

Estrella continue to carry out all the production phases from the choice of raw materials and cutting, to obtaining fresh, cured Iberian products, fats and meat flours of the highest quality. Cured meats are made under meticulous natural and artisanal curing process.
