Pale gold with a faint green edge. Lean in and there's honeycomb. Then cardamom. Then something floral and citrusy that keeps shifting the longer you hold it.
The palate is bright and alive. Grapefruit and lemon zest up front, a mineral thread underneath, and an acidity that builds through the mid-palate and stays. Long, taut, and genuinely interesting. This is what Oddbird means by low intervention. The wine was left to be itself.
100% organic, hand-harvested Auxerrois, Pinot Blanc, and Riesling from Northern Alsace — one of France's most mineral-driven wine regions. Aged twelve months. The world's first alcohol-free natural wine.
