A mix of both bittersharp cider apples known for their excellent acid/tannin balance, and sweet juicy eating apples. Inspired by the French style of cider, we let the fruits natural yeasts wild ferment before stepping in to ARREST the ferment, leaving a desirable natural sweetness.
