Method: Fermented in small stainless-steel tanks to preserve the purity, before undergoing a second fermentation in the bottle and 12 months of aging on lees to build depth and complexity.

Tasting Notes: This wine is straw yellow in colour with a slight greenish hue. The nose has hints of yeast and resin and it has elegant, very fine bubbles. On the palate there is some creaminess, delicate citrus fruit and brioche. It has balanced acidity and minerality that carry through to a refined, persistent finish.
