Our winemakers use minimal intervention in the wine-making process to allow the fruit and terroir to fully express itself. We use natural wild yeasts to ferment our wine, with minimal sulphites at bottling.
This wine had a stainless steel fermentation and aged for eight months in old oak barrels. Further notes:
