Bird & Barrow Chicken Mignon

We make our chicken mignons from the boneless thigh. Each thigh is stuffed with a herby butter, then wrapped in streaky bacon (gluten free).
Too keep all the tasty juices of the mignon, place each mignon in a tinfoil ‘boat’. They are easily baked in the oven (or BBQ) around 180’C for 30-40 minutes.
