YO-MIX® 601 is a traditional yoghurt culture known for its fast and strong acidification. It produces both L( ) and D(-) lactic acid, a high level of polysaccharides, and develops a medium to strong yoghurt aroma. This culture creates a very creamy, full-bodied yoghurt with high viscosity, making it ideal for premium yoghurt applications.
