Country Pioneer Loaf, sprayfree (sourdough)

My country loaf is a classic shaped loaf with a real crust. It has an open crumb and is an allrounder for sandwiches, toasties, platters and even fancy bread crumbs.

It uses spray free (Pioneer) white flour from our local mill and a sprinkle of organic, freshly milled wholemeal flour.
