EATING Mild, sweet and creamy, Brill have apricot-coloured fillets that whiten on cooking. It’s a semi-delicate fish that is suited to pan-frying or baking. Brill is from the flatfish family and is very closely related to Turbot. Brill fillets are usually larger and denser than other flatfish (like Sole). It's an underrated eating fish, and one of our favourites. A standard serving of protein for a hungry adult at dinner time is 150g-200g, if you’re wondering how much to order. Just like meat, bring your fish up to room temperature before cooking for best results.
STORING Fresh fillets should be stored in an airtight container in the fridge and will keep for 2-3 days. If you receive fish from us vacuum-packed, it’s perfectly fine to be popped into the fridge in the sealed bag, but a better option would be to unpack it into an airtight container.
