Lemon Sole Fillets Frozen

EATING Lemon Sole are part of the flatfish family, along with Sole, Brill and Flounder. Lemon Sole fillets are delicate and sweet, and best suited to pan frying or baking. The fillets are on the thinner side, and usually a medium size. It's skinless, boneless and packed in a handy 2kg box that easily fits in the freezer, or a larger 5kg carton. Bring fish up to room temperature (just like meat) before cooking for best results.

STORING Store our frozen Lemon Sole in the freezer until you're ready to use it. It's best defrosted in the fridge. If you're short on time, pop fillets into a sealed bag and submerge in water that's a bit cooler than room temperature. Change the water every 20-30 minutes and weight the fish down so it's fully submerged in the water (not bobbing about).
