EATING Tua Tua are a New Zealand surf clam. They have a rich, creamy texture and are suitable for eating raw shucked, or for cooking. They're delicious eating. The shell of Tua Tua should be tightly closed when live, or close when pressed together firmly. If the shell is open, don't consume. Also avoid consuming any that don't open when cooked. Our Tua Tua are sold live, by the KG.

STORING Tua Tua can be stored for a day or two in a domestic fridge with a damp tea towel or cloth covering them. Drain the container they are stored in regularly, as they are likely to release liquid.
