Processing Excellence
The Chelbesa Natural is processed at a wet mill operated by Negusse Debela, who manages two sites in Worka Chelbesa, including one in the Danche sub-area. Negusse's commitment to quality is evident in his processing methods, which include Natural, Washed, and unique experimental lots. For the Natural process, only the ripest coffee cherries are harvested and dried whole on raised beds, a meticulous method that can take up to four weeks. This careful processing enhances the coffee's inherent flavors and ensures a clean, vibrant cup.
