Slicing, cutting and dicing when you feel a chefs knife is a little too unwieldy for the job, or for that quick solo lunch you're throwing together when you don't want to dirty up your best chefs knife. The blade is a little longer than the paring knife and crucially, it's deeper and the geometry includes a steeper angle between the blade edge and the handle allowing clearance for your hand so that it can be used on a chopping board.
