Another simply cracking Mortlach from Signatory, aged for 17 years in total, including a final maturation in an first fill ex-Oloroso sherry butt. A sister cask to a previous release we've had, this carries the same signature of rich fruit puddings, layers of Christmas spices and dried fruits smothered in bitter chocolate. Mortlach's unmistakable savoury character sits just below, a meaty quality that is reminiscent of beef stock, or the caramelised, flavour-packed scrapings from a beef roasting tray.
